Description: Pronounced kwun-uh-man, this rich and decadent French pastry is guaranteed to wow with every bite!

Kouign-Amanns are made with the same light and flaky pastry dough as our Morning Buns, so the texture is similar. The main difference is the shape and the flavours.

The dough is sweet and sticky. When baked the sugars will caramelize resulting in a firm but chewy outer layer. When you take a bite the thin layers of pastry will crackle in your mouth. The heart of the bun is soft, moist and buttery. It dominant flavour is cardamom with notes of buttery, decadent caramel. This is definitely one of baker Mike's finest pastries!

Luv Affair Pastry was created by local baker Mike. He has spent many years perfecting his recipes. He originally started off selling his pastries at the Nelson farmers market. He then had a pop up at Au Soleil Levant for many years. Mike makes some of the best pastries we've ever had so we were excited when he decided to let us carry his products!

Details: comes in a box of 3 or 6 unbaked pastries.

Ingredients: Organic Anita's flour (Chilliwack), grass-fed butter, yeast, sourdough starter, salt, cardamom.

 

Baking Instructions: 

Take the pastries out of the freezer and place each one in its own large muffin tin. The muffin tins should measure about 3” in diameter, regular sized muffin tins will not be large enough. 

Cover pastries with plastic wrap and let them proof in the large muffin tins overnight.

In the morning, preheat the oven to 350 f. Sprinkle about 1/4 tsp of sugar on each pastry before putting in the oven. This will help to caramelize the Kouign-Amanns.

Bake for 30 - 32 minutes, or until there is only a small area of pastry in the center that is not a deep golden brown. 

Remove pastries from the oven and let cool on a cooling rack for 5 minutes only to prevent them from sticking to the muffin tins. Then remove the pastries from the muffin tins and let them cool for a few minutes more before serving.
