Description: This recipe was inspired by Emily's Mom's famous Thanksgiving stuffing. Stuffing was always Emily's favorite dish at Thanksgiving and the smell of butter, sage and celery cooking on a hot stove top is a nostalgic one.

For this stuffing we started by milling locally grown Hard Red Spring wheat berries, grown in Armstrong, into a fresh and fluffy whole wheat flour and then combined it with Anita's organic whole wheat flour. We then hand-folded each bread loaf and baked them until they turned dark brown. This is the exact same recipe as our popular Hearty Whole Wheat bread.

We then added organic dried sage and thyme, onions from our farm, garlic from Against The Wind Farm in Winlaw, celery from Linden Lane Farm in Krestova, free-range eggs and house-made bone broth made with bones from Kootenay Natural Meats in Creston and Gravenstein apples from Sunny Spot Farm in Bonnington. This recipe is a true local collaboration!

This is a bake-at-home stuffing that will be ready in just one hour once thawed. Once it's cooked you can pull it out of the oven and let the aroma of herbs and bread fill the house. The stuffing is warm and the texture is soft and spongy. The flavour of the Hearty Whole Wheat bread adds a wonderful nutty flavour. The sage and thyme complement each other perfectly while the apple adds a hint of sweetness to balance out the savouriness. This is comfort food at its finest!

Details: Comes in a large 2 inch deep, 9 inch aluminum pie pan. The stuffing is frozen so let it thaw on the counter for about 4 hours before baking. 

Ingredients: Hearty Whole Wheat Bread (freshly-milled hard red springs flour, Anita's organic whole wheat flour, organic extra virgin olive oil, brown sugar, salt), butter, apple (grown by Sunny Spot Farm, Bonnington, celery (grown by Linden Lane Farms Krestova) ,free-range egg and bone broth (from Kootenay Natural Meats, Creston), onion (from Confluence Farms), garlic (grown by Against The Wind Farm, Winlaw) organic sage, organic thyme, pink Himalayan salt. 

 

Baking Instructions

Remove the lid and thaw the stuffing on the counter uncovered for about 4 hours or until thawed.

Place your baking rack on middle level and place a thick bottomed baking sheet in the oven to preheat.

Heat the oven to 400 f.

Place the stuffing on the preheated baking sheet.

Bake for 45 min.
