Emily and I picked tomatoes fresh off the vine, pulled purple onions from our soil, harvested perfectly ripe hot peppers and roasted them in the oven until they were blackened and nicely charred.
The roasting caramelizes the onions, bring out its sweetness while giving the tomatoes and hot peppers a beautiful smoky flavour. We then added a splash of organic lime juice and spices to really make the flavours pop.
This salsa is mostly made from ingredients the we grew on our farm and like summer it won't be around for long, so enjoy some while supplies last!
