Description: When our friend and fellow farmer Jordan Marr from Unearthed Organics Farm in Vernon told us he grew popcorn we were blown away! We both love popcorn but we never thought of it as a locally-grown food for some reason.
He grew an heirloom variety called "Amish Butter". This corn dates back to the 1800s and has been grown by the Pennsylvania Dutch for generations. The kernels are an almost ivory white colour. When popped it makes a beautiful bright white popcorn. Just drizzle on some warm melted butter and a dash of salt and you'll be ready to enjoy this local treat!
Details: sold in 1/2 lb and 1 lb portions.
Cooking Instructions:
Preheat a large, thick-bottomed pot or Dutch oven on medium high heat.
Once hot, add 90 grams coconut oil or other high-heat oil to the pot.
Add 3 popcorn kernels to the pot. Once these pop, you know the oil is hot enough.
Remove the 3 popped kernels, then add 1/2 c popcorn kernels to the hot oil. Swirl to coat the kernels in the oil, then keep the lid cracked just slightly to let the steam out.
Swirl the pot every few minutes until almost all of the kernels have popped and there is a 2-3 second pause between the remaining kernels popping.
Remove from the heat but leave the popcorn in the pot for 30 seconds to get the remaining kernels to pop.
Remove the popcorn from the pot and serve immediately.
