This rare variety traces back to traditional Appalachian and Indigenous corn-growing traditions, where richly pigmented corn was valued for its robust taste and high nutrient content.

Ruby Cascade bakes up yellow and brings a hint of sweetness and a warm, toasty depth to cornbread, pancakes, and baked goods—adding both flavour and history to every dish.

About Our Freshly Milled Cornmeal

This is no ordinary cornmeal. This is the freshest and tastiest cornmeal you can find. The corn was harvested in the fall of 2025 and milled in November by Jordan Marr, a solo farmer from Vernon and Emily's former boss. Jordan's farm, Unearthed Organics, used to supply premium salad greens and veggies to the top winery restaurants in Kelowna, such as Mission Hill and Quails Gate.

He recently transitioned his business so he could focus on something he was more passionate about - beans, corn and chiles! He now grows a variety of top-quality corn and this year we were lucky enough to get a hold of some.

Details: sold in a 340 g (12 oz) bag, which converts to 2.25 cups.

Store in the freezer to preserve freshness. Can be used while still frozen.
