Bowl Ingredients
1 lb ground beef or ground pork
1 cup wheat berry 'rice', soaked overnight and then cooked
2 bunches Asian greens, such as Bok Choy, Pac Choi, Komatsuna, Vitamin Green, etc.
Toasted sesame seeds for garnish
Sauce Ingredients
1/3 cup (79 ml) soy sauce
1/4 cup (55 grams) brown sugar
1 tbsp sesame oil
1/2 tsp ginger powder or fresh ginger, miced finely
1/2 tsp garlic powder or fresh garlic, minced finely
1/4 tsp chile flakes
Serves 2-3 people
Instructions
Cook the rice.
Heat a skillet. While waiting for it to preheat, make the sauce by combining all of the ingredients in a bowl and whisking well.
Once the pan is hot, add the ground meat followed by the sauce. Cook until the meat is done, stirring often to break it up.
While the meat is cooking, preheat another skillet for the Asian greens.
Chop the Asian greens, then once the pan is hot add a small amount of oil and the chopped greens. Cook briefly, until the stems are just tender. Remember to use salt very sparingly or not at all since the beef sauce is salty!
Once the greens have cooked, assemble the bowls using the cooked wheat berries, saucy meat, and greens. Top with toasted sesame seeds and serve.
