Unlike the more common red radicchio, this variety is predominantly white, with pale yellow or light green streaks and pink speckles. It forms a compact, round head, similar to a cabbage in shape. The leaves are crisp with a delicate, slightly bitter flavor, making it a prized ingredient in Italian cuisine.
