Ingredients
1.5 lbs Delicata Squash
185 grams Asiago cheese
Red chile flakes or smoked paprika
olive oil
salt
Serves 2-3
Instructions
Preheat the oven to 425f. Cut the Delicata into thin rings, a little thicker than a pencil.
Scoop out the seeds from each ring, then toss to coat evenly in the olive oil.
Grate the cheese. Spread the cheese in an even layer over a non-stick or cast iron sheet pan, then place the Delicata rings on top of the cheese so that they touch but don't overlap.
Sprinkle salt and the Chile flakes or paprika over the Delicata, then place on the top rack of the oven.
Bake for about 25 minutes, or until the Delicata is tender and the cheese is a little browned. Keep a close eye because the thinner the slices, the faster the cooking time.
Remove the pan from the oven and let cool for a few minutes before serving.
