Caesar Salad with Focaccia Croutons

 

Dressing Ingredients

200 grams mayonnaise 

50 grams grated Parmesan or Asiago cheese

25 grams whole anchovy fillets 

30 grams lemon juice

10 grams Dijon mustard

10 grams Worcestershire 

5 grams fresh garlic

1/4 tsp garlic powder 

1/4 tsp freshly ground black pepper, or to taste 

 

Crouton Ingredients 

275 grams sourdough focaccia 

63 grams / 1/4 cup olive oil

2 tsp dried rosemary 

1/2 tsp salt

1/2 tsp garlic powder

Serves 4-5

 

Instructions

Add all of the dressing ingredients to the bowl of a food processor and blend until smooth. Taste and adjust if needed. 

preheat the oven to 400 f. 

Slice the bread into small cubes, then toss with all of the other croutons ingredients. Place on a baking sheet and bake for 10 minutes, or until just starting to brown. Take them out before they get too hard, as they will continue hardening after they cool. 

Serve the dressing and croutons with baby kale, gem lettuce, or other sturdy greens.
