Ingredients
2 medium-sized butterstick yellow zucchini, about 1 lb
1 handful basil, about 30 grams
1 small chunk feta cheese, about 50 grams
1 tbsp coconut oil or olive oil
Serves 3-4
Instructions
Preheat a large skillet on medium-high heat. Once the pan is hot, add the oil.
Meanwhile, slice the zucchini into thin rounds. Once the oil is hot, add the rounds to the pan, taking care to arrange them so they are not overlapping. Sprinkle a small amount of salt over the zucchini.
Cook for about 3 minutes or until starting to go golden brown on the bottom, then flip. Cook about 1 minute more, then remove from heat. You want the zucchini to still have some bite so it doesn't need to be cooked entirely through.
Transfer the cooked zucchini to a bowl.
Chop the basil into rough pieces, then add to the bowl.
Crumble the feta, then add to the bowl. Toss to coat evenly, then serve.
