Charred Sugarloaf Radicchio

 

Ingredients

1 head sugarloaf chicory (radicchio)

olive oil

salt

freshly ground black pepper 

Serves 4-5 

 

Instructions

Preheat the oven to broil. 

Cut the sugarloaf in half lengthwise and place on a baking sheet. 

Pour olive oil over the sugarloaf and rub it in with your hands or a pastry brush for an even coating on both sides. 

Sprinkle salt and freshly ground black pepper over the sugarloaf, then place it in the oven on the top rack. 

Broil for 5-7 minutes, or until the top half of the sugarloaf is charred to your liking. 

Take the pan out of the oven and flip the sugarloaf to its other side. Sprinkle with salt and black pepper, then place back in the oven.

Broil the other side for 5-7 minutes or until charred to your liking. 

Remove the sugarloaf from the oven, let it rest for 2 minutes and then take it off of the pan and place the whole halves on a cutting board. 

Chop the sugarloaf into bite-sized pieces and then serve immediately so it is still hot.
