Greek Salad

 

Ingredients

340 grams cherry tomatoes

340 grams cucumber

120 ml good quality olive oil 

110 grams feta cheese

1 tbsp plus 1 tsp dried oregano 

1/4 tsp salt

80 grams Kalamata olives, pitted

60 ml red wine vinegar

54 grams red onion or fresh sweet onions

Makes 4-5 servings

 

Instructions

Cut the onions pole to pole, into long thin strips. Add to a small bowl or jar. Cover the onions with the red wine vinegar and let sit for at least 15 minutes to quick pickle.

Cut the cherry tomatoes and olives into quarters. Add to a bowl.

Cut the cucumber into small pieces about 1/2 " big. Add to the bowl. 

Dice the feta into small pieces about 1/4" big and add to the bowl.

Add the olive oil, salt, and oregano to the veggies and stir together thoroughly.

Once the onions have been quick pickled, add the red wine vinegar and onions to the bowl. Stir together thoroughly, then serve. This dish does not keep well so try to eat it all!
