Ingredients
1/2 lb Garlic Scapes
Olive oil
Salt
Instructions
Chop the tough flower portion off of the scapes and then cut each scape in half so you have about 4 inch pieces.
Toss the scapes in olive oil and sprinkle with a very small amount of salt. They will shrink when cooked so be careful not to over salt the scapes.
Place on a cast iron pan or stainless steel baking sheet and place in the oven on the middle rack.
Roast for about 10 minutes, or until soft and browned on one side. Check for doneness frequently as they can easily become too crisp.
Remove from the oven and immediately take the scapes off of the pan to cool. Serve right away.
