How To Roast & Puree A Pumpkin

 

Ingredients

Pie Pumpkin, such as Winter Luxury

 

Instructions

Preheat the oven to 400 f. 

Cut your pumpkin in half and scrape out the seeds. For pumpkins over 4 lbs, cut into 4 pieces total.

Arrange the pumpkin slices skin side up on a cast iron pan or sheet pan so that they have an inch or so in between all of the pieces. 

Place in the center of the oven and roast for about 1 hour, or until the skin collapses when you poke it and the flesh is very soft. 

Remove the pumpkin from the oven and let it cool completely before proceeding to the next step. Make sure not to cover the pumpkin while it is cooling because you want as much moisture to evaporate as possible. 

Once cooled, remove the skin from the pumpkin and use a food processor fitted with the blade attachment to process until smooth. 

Either use the purée right away or place into an airtight container and refrigerate or freeze for later use.
