How to Cook Khorasan ‘Rice’

Ingredients
1 cup/ 240 grams Khorasan grains
1 cup water or broth for cooking in a pressure cooker or 3 cups for cooking on stovetop
Pinch of salt
Makes 4 servings
Instructions
Soak the Khorasan grains overnight.
The next day, drain and rinse the grains.
Instant Pot (preferred method):
Add the grains and 1 cup of water or broth to the Instant Pot or pressure cooker.
Cook on high pressure for 30 minutes. Wait 5-10 minutes to release pressure before releasing steam valve.
Stovetop:
Add grains and 3 cups of water or broth to your pot. Bring to a boil, then reduce to a simmer and cook with the lid on for about 1 hour or until grains are tender. Strain off excess liquid before serving if necessary.
