Roasted Watermelon Radish

2 lbs Watermelon radish

Olive oil



Preheat oven to 425 f.

Peel or slice any blemishes off of the watermelon radishes, then slice into pieces about 1/4 “ thick.

Drizzle with olive oil and toss to coat radishes evenly. 

Place the radishes on a sheet pan or cast iron pan and arrange so that the pieces don’t overlap.

Sprinkle with salt. 

Place pan in the center of the oven and roast for 30 minutes or until fork tender.
