Cornmeal Waffles
Whole grain waffles with a satisfying bite from fresh-milled flour and cornmeal. Soak overnight for the best texture.
Ingredients
120 g freshly milled whole wheat flour
120 g freshly milled cornmeal
160 g plain yogurt
160 g cream
60 g water
40 g sugar
70 g melted coconut oil
2 eggs
2 tsp baking powder
1 tsp salt
Instructions
Combine the cornmeal and whole wheat flour with the yogurt, cream, and water. Mix well, cover, and soak in the refrigerator for a minimum of 1 hour or overnight.
Melt the coconut oil and set aside to cool slightly.
To the soaked cornmeal mixture, add the sugar, baking powder, and salt.
Whip the eggs with the coconut oil and then add to the cornmeal mixture. Stir thoroughly and then add about 1/2 cup of batter per waffle to your hot waffle iron.
Makes about 6 waffles.
