Special Holiday Deliveries This Week š
We will be offering a special weekday delivery this week to give everyone more chances to get their holiday goodies!
Nelson deliveries will be on Wednesday evening on Dec 20 between 3pm and 7pm and Saturday morning Dec 23 between 8 am and noon.
Castlegar deliveries will be on Thursday evening Dec 21 between 3pm and 7pm and Sunday morning Dec 24 between 8 am and noon.Ā

Baking Fail š
It wouldn't be the holidays without a few baking fails.
The store was out of our regular parchment paper so we had to buy a different brand. The box just said āparchment paperā with no other description. When we used it for our baking we discovered it had a glossy coating on it. We assumed it was not a big deal.Ā
What happened next was a minor catastrophe. Since the parchment paper was glossy some of the cookies slid off of the paper in the convection oven and smooshed together. We ended up losing 3 large trays of cookies before we figured out what was going on.
We're learning that baking is an unforgiving craft. One small change can have huge consequences. Luckily, most of our cookies turned out great and Christmas wasn't ruined š

Fresh Kidney Dry Beans
Description: Kidney beans are native to the Americas and are one of the most popular bean varieties. They have a firm and meaty texture with a full-bodied flavour which makes them a great choice for chili, soups and salads.Ā
Details: sold in 1/2 lb and 1 lb portions.
A 227 g portion of dry beans becomes 1 cups when cooked.Ā

About Our Fresh Dry BeansĀ
These are no ordinary dry beans. These are the freshest and tastiest dry beans you can find. They were harvested in the fall of 2023 by Jordan Marr, a solo farmer from Vernon and Emily's former boss. Jordan's farm, Unearthed Organics, used to supply premium salad greens and veggies to the top winery restaurants in Kelowna, such as Mission Hill and Quails Gate.Ā
He recently transitioned his business so he could focus on something he was more passionate about - beans, corn and chiles! He now grows a variety of top-quality dry beans and this year we were lucky enough to get a hold of some.

Fresh Rockwell Dry Beans
Description: Rockwell beans are an heirloom variety hailing from Washington State. Due to a tragic fire in 2017, the Rockwell Bean stock was almost lost forever. With the support of the local community and chefs returning what little seed they had, a sufficient quantity was revived. Rockwell Beans are very rare and recently boarded on the Slow Food USA Ark of Taste.
They are terrific for stewing, baking and casseroles.

Freshly Milled Montana Morado Cornmeal
Description: Montana Morado kernels are deep purple approaching black that results in a cornmeal that looks blue but cooks up purplish.Ā
Spurred by a vision, devoted corn breeder Dave Christensen has worked over 30 years to create a variety with the highest antioxidant content possible. A Navajo elder told Dave that the black kernels are "for healing," and so he selected for the darkest kernels from grain corn grown in Montana and the surrounding states.
One year, Dave and another organic farmer grew 10 acres ā just so they could select from the plants with the blackest kernels.
It makes excellent cornbread because it is a rare, soft-flour. You can also make pancakes, muffins, fritters, or polenta - the recipes are endless!
Details: sold in a 340 g (12 oz) bag, which converts to 2.25 cups.
Store in freezer to preserve freshness. Can be used while still frozen.

Freshly Milled Floriani Flint Corn
Description: Floriani Flint Corn kernels are red but result in a yellow cornmeal with red specks that cooks up yellow. This is a taditional flint corn from Northern Italy, selected for hundreds of years by farmers of the Sugana Valley for making polenta.Ā
It makes excellent cornbread. You can also make pancakes, muffins, fritters, or polenta - the recipes are endless!

Locally-Made TofuĀ
Description: Silverking Soya Foods has been operating in Nelson for more than 20 years! They practice traditional tofu production using a small batch closed-kettle method.
All of the ingredients that go into their tofu are organic. The soybeans are sourced from an Ontario farm. And the traditional Japanese coagulant that they use, known as nigari (magnesium chloride), which gives it a unique bittersweet flavour, is sourced from Vancouver Island Sea Salt Company.

Nothing says it's the holidays quite like molasses cookies. This is the only cookie recipe that uses our freshly milled Red Fife flour. The nuttiness of the Red Fife pairs perfectly with the rich molasses flavour.
